Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream

For the strawberry topping:

  • 2 cups fresh strawberries, washed, hulled, and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/4 cup water

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or cooking spray.

  2. Crust:

    • In a medium bowl, mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until the crumbs are evenly coated.
    • Press the mixture into the bottom of the prepared springform pan, creating an even layer.
    • Bake the crust in the preheated oven for about 10 minutes. Remove it from the oven and let it cool while you prepare the filling.
  3. Filling:

    • In a large mixing bowl, beat the softened cream cheese and 1 cup granulated sugar together until smooth and creamy.
    • Add the eggs one at a time, beating well after each addition.
