To make a delicious mint chocolate chip cake, here's a recipe you can follow:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons mint extract
  • 1 cup boiling water

For the Frosting and Filling:

  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon mint extract
  • Green food coloring (optional)
  • 1/2 cup mini chocolate chips (for filling and decoration)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

  3. Add the milk, vegetable oil, eggs, and mint extract to the dry ingredients. Beat on medium speed until the batter is well combined. Reduce the speed to low and slowly pour in the boiling water. Mix until the batter is smooth. The batter will be thin, but that's okay.
