Baking brownies in an electric pressure cooker, also known as an Instant Pot, is a convenient and efficient way to enjoy this delicious treat. Here's a simple step-by-step guide on how to do it:

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • Cooking spray or butter for greasing the pan

Instructions:

  1. Start by greasing a suitable pan that will fit inside your electric pressure cooker. A 6-inch round or square baking pan that's compatible with your Instant Pot is ideal. You can also use a springform pan, but make sure it's watertight or cover it tightly with aluminum foil to prevent water from getting into the brownie batter.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.

  3. In a separate large bowl, mix the melted butter and granulated sugar until fully incorporated.

  4. Add the eggs and vanilla extract to the butter-sugar mixture, and whisk until smooth.

  5. Gradually add the dry ingredients (flour mixture) to the wet ingredients, stirring until you have a smooth and thick brownie batter. If desired, fold in the chocolate chips for extra chocolatey goodness.

  6. Pour the brownie batter into the greased baking pan, spreading it evenly.

  7. Add 1 to 1.5 cups of water to the electric pressure cooker's inner pot. The exact amount will depend on the size of your pressure cooker, but you want enough water to create steam for the cooking process.

  8. Create a sling using a long strip of aluminum foil to easily lower and lift the pan into and out of the pressure cooker. Fold the foil strip lengthwise to make a long, narrow sling.

  9. Place the foil sling under the baking pan and lower it carefully into the pressure cooker.

  10. Close the pressure cooker lid and set it to "Sealing" position.

  11. Select the "Pressure Cook" or "Manual" setting, and set the cooking time to 20 minutes on high pressure.

  12. Once the cooking time is up, allow for a natural pressure release (NPR) for about 10 minutes. Then, carefully switch the pressure release valve to "Venting" to release any remaining pressure.

  13. Open the lid when the float valve drops, indicating that the pressure has fully released.

  14. Use the foil sling to lift the brownie pan out of the pressure cooker.

  15. Let the brownies cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  16. Once cooled, slice and serve the brownies as desired.

Remember that cooking times may vary slightly depending on your specific electric pressure cooker model, so it's always a good idea to consult your Instant Pot's user manual for specific instructions.

Enjoy your freshly baked brownies from the electric pressure cooker!
