Here's a classic recipe for seasoning and cooking a pork roast:

Ingredients:

  • 3-4 lbs pork shoulder or pork loin roast
  • 3-4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried sage
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, dried sage, paprika, salt, and black pepper to form a paste.

  3. Pat the pork roast dry with paper towels. Rub the seasoning paste all over the pork roast, ensuring it's coated evenly on all sides.

  4. Optionally, you can let the seasoned pork roast sit in the refrigerator for a few hours (up to overnight) to allow the flavors to meld.

  5. Place the pork roast in a roasting pan or an oven-safe skillet.

  6. Roast the pork in the preheated oven for about 1.5 to 2 hours, depending on the size of the roast, until it reaches an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium doneness. Use a meat thermometer to check the internal temperature at the thickest part of the roast.

  7. Once the pork roast reaches the desired doneness, remove it from the oven and cover it with foil. Allow it to rest for about 10-15 minutes before slicing and serving.

  8. If you want to make a gravy, you can use the drippings from the roasting pan. Pour the drippings into a saucepan, add some chicken or beef broth, and thicken with a cornstarch slurry until the desired consistency is achieved.

Serve the sliced pork roast with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh salad. Enjoy your deliciously seasoned and roasted pork roast!
