Ingredients:
- 3-4 pounds (1.4-1.8 kg) pork shoulder or pork butt
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 cup barbecue sauce
- 1/4 cup apple cider vinegar
- 1/4 cup chicken or vegetable broth
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
Season the pork shoulder with salt, pepper, smoked paprika, and chili powder. You can sear the pork in a hot pan for a few minutes on each side to add extra flavor, but this step is optional.
In a bowl, mix together the barbecue sauce, apple cider vinegar, chicken or vegetable broth, brown sugar, Dijon mustard, and Worcestershire sauce.
Place the sliced onions and minced garlic at the bottom of the slow cooker. Lay the seasoned pork shoulder on top.
Pour the barbecue sauce mixture over the pork, making sure it's evenly coated.
Cover the slow cooker and cook on low heat for 8-10 hours or on high heat for 4-6 hours. The pork should become very tender and easily pull apart with a fork.
Once the pork is done cooking, remove it from the slow cooker, and shred it using two forks.
If you want to thicken the sauce, you can transfer it to a saucepan and simmer it until it reaches the desired consistency.
