Cooking a pork loin in a slow cooker is a fantastic way to ensure a tender and juicy result. Here's a simple and delicious recipe for slow cooker pork loin:

Ingredients:

  • 3 to 4 lbs (1.4 to 1.8 kg) pork loin roast
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth or pork broth
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar

Optional additions: You can add sliced onions, minced garlic, or chopped carrots and potatoes for extra flavor and a complete meal.

Instructions:

  1. In a small bowl, mix the garlic powder, onion powder, dried thyme, dried rosemary, dried sage, paprika, salt, and pepper.

  2. Rub the pork loin roast all over with the spice mixture, ensuring it's evenly coated.

  3. Heat olive oil in a large skillet over medium-high heat. Brown the pork loin roast on all sides for a few minutes to sear the meat and lock in the flavors.

  4. Once the pork loin is browned, transfer it to the slow cooker.

  5. In the same skillet, add the chicken broth, soy sauce, Worcestershire sauce, and brown sugar. Stir the mixture and bring it to a simmer for a minute or two to combine the flavors.

  6. Pour the liquid mixture over the pork loin in the slow cooker.

  7. If you're adding any optional ingredients like onions, garlic, carrots, or potatoes, now is the time to place them around the pork loin in the slow cooker.

  8. Cover the slow cooker with a lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours. Cooking times may vary depending on your slow cooker and the size of the pork loin. The pork loin is done when it reaches a safe internal temperature of 145°F (63°C).

  9. Once the cooking time is complete, remove the pork loin from the slow cooker and let it rest for a few minutes before slicing.

  10. If desired, you can use the liquid from the slow cooker to make a delicious gravy. Simply transfer the liquid to a saucepan and bring it to a simmer. In a separate small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Slowly stir the slurry into the simmering liquid until it thickens into a gravy.

  11. Slice the pork loin and serve it with the gravy (if using) and any additional side dishes you like.

Enjoy your tender and flavorful slow cooker pork loin!
