Here's a simple recipe for anchovy pizza sauce:

Ingredients:

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 6-8 anchovy fillets, drained and chopped
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for added heat)
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  3. Add the chopped anchovy fillets to the saucepan and cook for another 1-2 minutes until they start to dissolve and release their flavors.
  4. Pour in the crushed tomatoes and stir well to combine with the anchovies and garlic.
  5. Add the dried oregano and red pepper flakes (if desired) to the sauce and stir again.
  6. Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally to prevent sticking.
  7. Taste the sauce and season with salt and pepper according to your preference. Keep in mind that anchovies are naturally salty, so you may not need much additional salt.
  8. Once the sauce has thickened and the flavors have melded together, remove it from the heat and let it cool slightly before using it as a pizza sauce.

This anchovy pizza sauce is rich in umami flavors and can add a delicious depth to your pizza. Adjust the amount of anchovies to suit your taste, as they can have a strong flavor.
